This Amazing Ramen was a perfect fit on a chilly night here in Edmonton.
It was easy, quick ad flavourful!

Ingredients:
Eggs *you need minimum 1 egg per person
2 1L Miso Broth
2 Heads of Bok Choy
3 Carrots
2 cups chopped mushrooms
3 Tbs of Creole Fixx
3 bundles of Ramen noodles * I used Gluten free ones

Directions:Start your large soup pot on low heat, make sure to add a little oil for non-stick.Rinse your Bok Choy & Chop then put it in the pot. Chop your mushrooms and add them in the pot.Mix and stir as they start to saute in the pot. Add 1 Tbs of Motley Que Creole Fixx. I shredded my carrots but feel free to chop yours.Mix all veggies together. You want them to all be cooked but not mushy. Now add your miso broth & stir.Add the last 2 Tbs of Motley Que Creole Fixx. Stir & cover on med heat.

Eggs:
In a side pot, start your eggs. We are looking for a rolling boil and we want our eggs to get to a hard boil. Once done cool, peel shell , sprinkle with Creole Fixx & set aside.

For the Noodles:
In another pot get your water to a boil and get your noodles on. There is a bit of a trick to this. I put the noodles in when boiling and start to separate them immediately. Then once they are all separated I cook them at a boil for 3-4 minutes and cool them asap with cold water. This ensures they won't stick together or become 1 big ball of noodle.

Ok circle back to your Soup. It should be about done, we want the veggies to be soft but not mushy.
Serve & Enjoy.
