Baci di Dama Italian Cookies
1 pound Almond Flour
1 pound Sugar
1 pound Pastry Flour (I always use whole wheat pastry flour)
1 Lb Unsweetened Butter, softened (or a healthy butter substitute such as Smart Balance or Earth Balance)
1/2 teaspoon almond extract (you can leave this out if you don’t have any but the almond extract really makes these cookies that much better)
1 1/2 Oz Cocoa Powder
1 Oz Egg Whites
Bittersweet Chocolate, melted as needed or apricot jam melted
