Technically Apple "Scrap" Vinegar. Just use apple cores & peelings (scrap), or the whole apple. Every so slightly less acidic than Apple "Cider" Vinegar. We use this for everything!

Brine is 2 tbsp sugar : 2 cups water.

You can add a splash of Apple Cider/Scrap Vinegar to your new batch to give it a kick start, and also help prevent any initial mold growth. Not necessary though. 🙂
