Peanut Butter Fudge

If you love peanut butter, you will love this fudge. It is so smooth, creamy and full of peanut buttery yumminess. The best part is how easy it is because it is all done in the microwave. Give it a try. - Michele

Ingredients
1 1/2 cups peanut butter (smooth)
1 1/2 cups butter (3 sticks)
1 1/2 lbs powdered sugar (7 - 8 cups)
2 tsp vanilla

Grease 9x13 pan with butter or non-stick cooking spray and line with parchment paper. Butter or spray the top of the parchment and then wipe it off so it is not too moist. In a microwave safe bowl, combine butter & peanut butter. Cover with a paper towel, microwave for 2 minutes on high and stir. Microwave in 1-2 minute intervals stirring in between. Add peanut butter and stir until melted in. Add the powdered sugar until the fudge reaches a smooth play dough consistency. Spread in lined pan and allow to cool completely. 10 minutes at room temp and then you can continue to cool in the fridge for 1-2 hours. Once cooled, you can slice into small squares. This fudge will store for 2 weeks in the fridge.
