Johnny Cakes, Corn Pancakes with Apple Blueberry Compote | Chef Terry

Todays Video I make a type of pancake make typically made from corn meal. Problem is this can be a bit gritty. To lighten this up Johnny Cakes, many recipes use flour. Here I use oat flour.

Johnny Cakes
1-1/2 cups Masa
1/2 cup Oat Flour
1 Egg
2-1/2 cups Milk
2 tablespoons Honey
1 teaspoon Baking Powder
Pinch of Salt

Apple Blueberry Compote
3 Apples peeled and diced
1/2 cup Sugar
1 teaspoon Cinnamon
1 Star Anise Pod
10 grinds (1/4 teaspoon) Nutmeg
1 ounce Apple Cider Vinegar
1 ounce AppleJack (Sub Calvados or white Wine
1/4 cup Dried Blueberries (Sub raisins or dried currants)
