INGREDIENTS :

600 grams sweet potato chunks ( 21.16 oz )
340 grams sliced onion ( 12 oz )
400 grams drained chickpeas ( 14.1 oz )
800 ml vegetable stock ( 27.05 fl oz )
3 minced garlic cloves
75 grams cranberry sauce ( 2.64 oz )
4 teaspoons harissa seasoning ( 12.98 grams )
1 tablespoon orange zest ( 6 grams )
12 grams chopped fresh coriander ( 0.42 oz )
2 tablespoons olive oil ( 26.6 grams )

INSTRUCTIONS :

.in a large pan / wok on medium heat add 2 tablespoons olive oil
.once heated add 340 grams sliced onion & cook for 7 to 10 minutes
.add 3 minced garlic cloves, 4 teaspoons harissa seasoning, cook for 2 minutes
.add 600 grams sweet potato chunks, 400 grams drained chickpeas
.add 800 ml vegetable stock & mix well
.add 75 grams cranberry sauce, 1 tablespoon orange zest, mix well & bring to a boil
.reduce to simmer, cover with lid, cook until sweet potatoes are soft
.add 12 grams chopped fresh coriander & mix well
