★ Chipotle Potato Bake
- 1 can black beans, rinsed drained
- 1 cup corn
- 3-4 cups chopped pre-cooked potatoes
- 1 cup bell peppers
- 1/4 cup onion diced
- 1 zucchini chopped or any other veggies you like, mushrooms would be good.
- 1 tbsp chili powder
- 1 tsp chipotle powder
- 1/2 tsp garlic salt
- Cheese sauce (optional)
Directions
1. Toss everything together and bake on 400F for 30 minutes.

★ PB&J Overnight Oats
- 1/2 cup rolled oats
- 1/2 cup almond milk
- 1 tbsp chia seeds
- 2 tbsp powdered peanut butter
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1.5 cup blended berries
Directions
1. Add your blended berries into the bottom of a 16oz mason jar.
2. Add the rest of your ingredients, lightly mix.
3. Top with a few extra frozen berries or extra blended berries.
4. Let sit overnight
5. Enjoy in the morning ☀️
1 serving - 426 calories - 77g carbs/14g protein/8g fat

★ Cheese Sauce
Ingredients
1 cup nutritional yeast
1/2 cup pb2 powdered cashews*
2 tbsp tapioca starch
1 tsp turmeric
1 tsp garlic powder
1 tsp paprika
1 tsp umami flavor (optional)
1/2 tbsp salt

To make
1 cup plant milk (unsweetened soy is best)
2 tbsp powdered cheese
Juice lemon (optional)

Mix dry ingredients and store in a mason jar. When you are in the mood for cheese sauce combine 1 cup plant milk with 2 tbsp of the cheese powder. Place in a saucepan over high heat and once it starts boiling it will thicken fast. Stir it continuously until it is as thick as you want it. I do only about 20-30 seconds then take it off the heat and use. You can add a little lemon juice or maple syrup to this for some extra flavor. Just a tiny splash can add a more complete flavor profile. *if you dont have access to the powdered cashews you can either grind your own powder or leave it out.
