Egg Bites
Makes 12

8 eggs
1/2 c. fat free Greek yogurt
4 c. fresh spinach, chopped
5 oz. Canadian bacon, diced
1/2 c. onion, diced
1 c. cheddar cheese, shredded
2 tsp. hot sauce

Heat oven to 350*. Grease the inside of 12 muffin tins. Set aside.

Crack eggs into bowl, add greek yogurt and stir until mixed.

Sauté the onion, add Canadian bacon and heat through.

Add the spinach, onion and Canadian bacon mixture, and hot sauce to the egg mixture. Stir until combined.

Divide the egg mixture into 12 muffin tins. Bake for 25 mins at 350* or until a knife inserted into middle of egg bite comes out clean.

Let cook for 5 minutes. Use a knife to loosen the egg bites from the muffin tin and remove to a plate or cooling rack.

These can be eaten immediately or put into the refrigerator for later.

To reheat: Microwave on high for 30 seconds.
