Pressure Canning Beans - No Soak Method

I love having home canned dry beans on my shelf, they truly are a convenience food when home canned. They are simple to do and saves a lot of money buying dry beans instead of canned. I hope you find this video helpful. I would love to hear about your experience canning dry beans.

Pressure Canned Dry Beans - No soak method
Makes 16 pints or 8 quarts

8 c. black beans (or any type that you have)
2 gallons boiling water
Canning & pickling salt

Sterilize jars, keep hot

Fill pressure canner with 2-3" of water, bring to a simmer

Rinse beans under cold water - look for imperfect beans, rocks, sticks, etc.

Fill each hot jar with beans and salt
Pints - 1/2 c. beans, 1/4 tsp. salt
Quarts - 1 c. beans, 1/2 tsp. salt

Add boiling water to jar, leave 1" head space

Remove bubbles, wipe rims, put on lids & rings

Put jars in canner, seal canner, allow steam to vent for 10 minutes, put weight on steam vent and allow canner to get to pressure

When canner has reached processing pressure, begin processing time (Make sure to use the correct pressure for your altitude)
Pints process for 75 minutes
Quarts process for 90 minutes

When processing time is up, turn off heat and let pressure decrease on its own

When pressure has reached 0 let sit for 10 more minutes. Open canner and remove jars with jar lifter onto towel so that the hot jars don't touch a cold counter.

You will hear the lids "pop" as they seal. This is music to your ears! You want to hear this sound. It may take up to 24 hours for all jars to seal. This is normal and you have not done anything wrong if it takes this long.

Remove the rings of your jars, label them, and add them to your pantry shelves.

Enjoy in taco's, salads, chili, etc.

Note:
You can add 1 T. of vinegar to the water in your canner to alleviate the hard water collected on the outside of your jars.

The reason that you want to remove your jar rings before storing your food is so there is not a false sense of a jar being sealed. If he seal fails while the jar is on the pantry shelf you will find out sooner than later.
