Espresso Syrup:
1/2 cup hot espresso
2 tablespoons raw sugar
1 tablespoon rum or 1/2 to 1 teaspoon rum extract. Adjust this amount to your taste. I don’t like a lot of rum so I used the lesser amount. *

Cupcakes:
6 eggs, at room temperature
1 cup fine raw sugar or organic sugar
1 tablespoon rum or 1/2 to 1 teaspoon rum extract. *SEE ABOVE
1 cup all-purpose flour (if you are new to my recipes, I always use whole wheat pastry flour instead of white flour to make my baked food a little healthier. The choice is yours)
1/4 teaspoon sea salt
1/3 cup unsalted butter, melted, plus more for greasing

For the Mascarpone Frosting:
1 cup heavy cream
8 ounces mascarpone cheese, room temperature
½ cup confectioners’ sugar, sifted
Unsweetened cocoa powder, for dusting
