Ham and Corn Chowder

What do you of with all of that leftover Christmas ham? Try this delicious recipe for Ham and Corn Chowder. Perfect for these chilly, winter days!

• 2 c chopped Ham
• 2 c corn
• 2 c diced potatoes
• 1 onion, chopped
• 1 large carrot, chopped
• 2 cloves garlic, pressed or chopped
• 6 cups ham bone stock
• 1 c heavy cream
• Salt
• Pepper
• Olive oil

1. Sauté onions in olive oil in a large pot over medium heat.
2. Add ham, corn, potatoes, carrots, and garlic.
3. Add stock and stir.
4. Turn heat to medium high until it comes to a rolling boil.
5. Reduce to a simmer and cook until veggies are soft.
6. Add heavy cream and stir.
7. Add salt and pepper to taste.
8. Enjoy!
