Becker's Easy Eats Holiday Specials: Easy Chocolate Cupcakes

More chocolatey delight, just because it's the holidays! Why not? Today I'm making fluffy and moist chocolate cupcakes topped with smooth, velvety dark chocolate frosting, plus sprinkles and a tiny meringue cookie on top! Make and enjoy them with your friends and family!

EASY CHOCOLATE CUPCAKES

Ingredient:

Cupcakes:
50g unsweetened cocoa powder
1 tsp instant coffee
I cup boiling water
175g all-purpose-flour
1 tsp baking soda
¼ tsp baking powder
113g room temp butter
2 large eggs
1 tsp vanilla extract

Frosting
115g 70% dark chocolate
150g room temp butter
160g powdered sugar
1 ½ tsp vanilla extract
Sprinkles
