150 g of flour
100 g of butter
50 g of icing sugar
a pinch of salt
vanilla extract (a few drops)
1 egg
sugar and cocoa to decorate
cooking time: 15-20 minutes in the oven at 180 degrees

They are called diamond biscuits, because they are wrapped in a caramelized sugar crust that makes them sparkle!!!

In a bowl pour 100 g of butter cut into cubes
Add 150 g of flour and knead with your hands
Knead until you get a mixture like this
Add 50 g of icing sugar
Then add an egg yolk
Add a pinch of salt and a few drops of vanilla extract

... Knead until you get a smooth and homogeneous dough like this
Divide the dough into 4 parts
Form each part into a roll like this
Then form 4 rolls like these
Meanwhile, take the egg white ...

Beat the egg white with a fork and meanwhile pour 2-3 tablespoons of sugar into a dish
Pass the rolls first in the egg white ...
... and then in the sugar
Proceed in the same way with another roll
Then pour a tablespoon of cocoa into the sugar
Mix with your hands
Then dip the remaining rolls first in the egg white ...
... And then in the sugar and cocoa
At this point, cut the rolls into slices about 1-1.5 cm thick
You will get about 40 cookies
Also cut the cocoa version
Arrange the biscuits on a baking sheet lined with baking paper
Bake in the oven at 180°C for 15-20 minutes until they are golden brown
