I could not find peppermint syrup or extract so I substitute them with Life Saver Pep O Mint! It is actually pretty good! I started with one pack of Life Savers but wanted more flavor so added another roll. Just perfection!

Holiday Cake Recipes For Christmas | Peppermint Cake w/ Box White Cake Mix | EASY RICE COOKER CAKES

NOTES:
* 1 cup = 250 ml
* Rice cooker capacity = 1.8 litre or 10 cups

INGREDIENTS:
• 3/4 cup (185ml) WATER (substitute with 1 cup Milk for creamier taste)
• 1 pak (24g) LIFE SAVERS PEP O MINT CANDY (1 or 2 pack for your taste)
• 1 box (15.25 ounce/432g) BOX WHITE CAKE MIX
• 3 EGGS
• 1/4 cup (60ml) OIL (or 1/3 cup melted butter)

FROSTING:
• 1/2 cup (4oz/115g) CREAM CHEESE (room temp)
• 1/2 cup (115g) BUTTER (room temp)
• 1/3 cup (65g) SUGAR (or 1/2 cup icing sugar, more for sweeter taste)
• 1 tbsp (15g) CRUSHED CANDY CANE

TOPPINGS:
• 2 tbsp (30g) CRUSHED CANDY CANE
• whatever else you like

HOW TO MAKE IT:
1. Dissolve the lifesaver candies in the water
2. Mix all cake ingredients until smooth, about 2 minutes
3. Pour into greased/lined pot/pan and bake for 2-4 bake cycles, about 1-2 hours. Rice cooker varies so check after 60 minute and bake longer as needed
4. If frosting, cool completely, about 2-3 hours
5. Beat all frosting ingredients together until smooth and frost however you like
6. Top with crushed candy canes or anything your hearts desire. Enjoy!

OVEN BAKING:
Bake in greased and lined pan, in pre-heated oven of 350F (180C) for 45-60 minute. Check about 45 minutes and bake longer as ovens varied
