Getting last minute things for Christmas and making Christmas candy.

Saltine Cracker Candy
Preheat to 400-degree oven
2 sticks of butter (1 cup)
2 cups chocolate chips
1 cup packed brown sugar (dark or light)
¾ cup pecans
1 sleeve saltines
In a sauce pan on low heat add the butter and brown sugar, stirring to mix, be careful not to burn; bring to a boil and boil for 3 minutes. (It should be a hard boil, stirring for the 3 minutes
On a cookie sheet with sides that has been covered with parchment paper, line up the crackers (close together and single file, breaking some in half if needed to fit).
Pour the sugar mixture over the crackers; and smooth the caramelized sugar over all the crackers.
Place into the oven and set the timer to 6 minutes.
Remove from oven and spread the chocolate chips over the top.
Cover with foil and set timer for 3 minutes.
After the 3 minutes uncover and gently spread the now melted chocolate chips evenly around.
Then sprinkle the chopped pecans over the chocolate.

Place the tray of cracker Candy in the fridge
Once hardened brake into pieces.
