How to Make Crumb Buns

Makes 12 large buns

1/4 cup warm water (about 110 degrees)
2 1/4 tsp (1 pkg) yeast
1/3 cup whole milk (I use plain unsweetened Almond milk)
1/4 cup (50 g) granulated sugar (I use and highly recommend either sugar in the raw or organic sugar)
6 tbsp (84 g) unsalted butter
3/4 tsp salt
1 large egg2 – 2/12 cups (260 – 325 g) all-purpose flour. place 1/2 of this flour in a separate bowl because it will be added as needed to adjust consistency (I use whole wheat pastry flour)

Crumb Topping

3/4 cup (150 g) light brown sugar (I use coconut palm sugar)
1 cup (200 g) granulated sugar (Again, I recommend either sugar in the raw or organic sugar)
1 tsp salt
1/2 tsp ground cinnamon
3 sticks (340 g) softened unsalted butter
3/4 cups cake flour (I use whole wheat pastry flour)
1/2 tsp almond extract
1 tsp vanilla extract
1/2 tsp ground cardamom
1/4 tsp ground nutmeg
