Dawkins, Evolution - a Critique

I was asked to do a critique of Richard Dawkins in a comment, which I sadly cannot do, but decided there is a bigger critique to be made here, of evolution in general and how folks seem to be using the term. First I go over a more clear understanding of the claims of science then what 'evolutionary theory' or Darwinism means as used. Then I attempt to clear up some of the confusion around this, making some simple points along the way.
The conception that most people use when talking about evolution involves words like 'want' which implies consciousness or is wrapped up in assumptions which are seemingly contradictory. They use words like direction which implies a purpose or goal with some thought behind things. What is the process of evolution and why do people think we can control it? Not that we don't have some influence over it, but how much? Do we know what we are doing when we mess with things which preceded our existence?
