Homemade Flan

Flan is one of my favorite desserts. Since we have on a Mexican food theme, we thought we would throw in a yummy dessert. We had this recipe and tried it out (unfortunately we don’t know where we found it) and it turned out fantastic. Give it a try. - Michele

8 oz. Cream cheese
5 Eggs
1 tsp Vanilla
1 can Evaporated milk
1 can Sweetened condensed milk
1/2 cup Sugar
1/4 cup Water

In a large bowl, beat the cream cheese until it’s light and fluffy.
Whisk in eggs one at a time.
Add vanilla, evaporated milk, & sweetened condensed milk then whisk.
In a sauce pan at medium heat, add sugar and water.
Bring to a boil until caramelized.
Pour caramel into a baking pan and spread across the bottom.
Using a colander, pour flan batter into the pan.
Put the flan pan into a larger pan and add boiling water into the larger pan.
Bake for 50 minutes at 325 degrees. Flan should jiggle in the middle when done.
Refrigerate over night.
Use a knife to release the flan from the sides of the pan.
Using a plate, flip the flan.
Enjoy.
