Sometimes you gotta get creative! We're putting together a DIY mount for our Starlink internet & working together to position it on top of our A-frame cabin for best signal. Then, we spend a wonderful day with our son Parker playing in the snow because sometimes ya just need a snow day! Cheers...

PRETZEL RECIPE:
1. ¾ cup milk
2. ¼ cup water
3. 2-1/2 TBS sugar
4. 1 pkg. active dry yeast (2-1/4 tsp)
5. 2-1/2 cups all purpose flour
6. 2 TBS softened butter
7. 1-1/4 tsp fine sea salt
8. 5 cups of water
9. 1/3 cup baking soda
10. 1 egg yolk-lightly beaten
11. 1 TBS cold water
12. Coarse salt (optional)

1. In small saucepan heat & stir milk, the ¼ cup water, and the sugar over low until warm (about 105 to 115 degrees). Pour into bowl of stand mixer fitted with dough hook. Sprinkle with yeast; let stand 5 minutes or until foamy. Add flour, butter, and the 1-1/4 tsp sea salt. Beat on low 2 to 3 minutes or until combined, scraping sides occasionally. Beat on medium low for 6-8 minutes or until soft dough forms.
2. Turn dough out onto clean surface. Knead a few times by folding & pressing dough. Turning dough to knead, uniformly shape dough into a ball. Place in a lightly greased bowl, turning once to grease surface of dough. Cover & let rise in a warm place until double in size (about 1 hour).
3. Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper. Punch down dough. Turn out onto a work surface. Divide into 8 portions.
4. Roll & stretch each portion into a 30” long rope. If the dough does not want to stretch, cover & let rest for 10-15 minutes.
5. To shape each pretzel, form each rope into a U shape & cross ends over each other, then twist once. Bring ends down to bottom of the U shape, press to seal.
6. In a deep skillet or wide pot, stir together 5 cups of water & the baking soda. Bring to a simmer. Using a slotted spoon, lower pretzels one at a time into the water (10-20 seconds). Remove pretzels & place on paper towels. Arrange pretzels 2” apart on the prepared baking sheet.
7. In a small bowl, combine egg yolk & 1 TBS cold water. Brush pretzels with egg mixture. If desired sprinkle with coarse salt. You may also add jalapenos or desired topping. Bake 11-13 minutes or until deep golden brown. Cool slightly on a wire rack, serve warm.
EASY CHEESE DIP:
Hand shred 3 oz. medium cheddar cheese (3/4 cup). In a small saucepan, melt 1 TBS butter over medium. Add 1 TBS all purpose flour & whisk to combine. Continue cooking & whisking 1 minute. Slowly whisk in ½ cup whole milk. Bring mixture to a simmer, whisking constantly. Simmer 1 minute or until mixture coats back of spoon. Remove from heat, whisk in cheese until smooth. Season to taste with salt/pepper. If you like a lot of dip, double the cheese recipe!
