My mom's Christmastime specialty, slow cooked candied pumpkin, chilled after 5 hours of slow cooking w/ mom's spices (she won't give up the recipe!)
Then she places the pieces in a large jar and uses the honey pumpkin simmer juice to keep it "pickled", it's extremely rich and sweet. Out of this world, amazing with a nice dark Armenian roast coffee.
