Ingredients:

• 1 Eggplant
• 2 carrots
• 1 onion
• 2 tomatoes
• 1 garlic
• 1 zucchini
• 1/2 red bell pepper
• 1/2 yellow bell pepper
• 1 leek
• 1/2 cup of raisins
• 1/2 cup olive
• 1/2 cup walnut
• 1/2 cup nuts
• Olive oil at will
• Salt and black pepper to taste
• Oregano to taste
• 15ml of balsamic vinegar
• 15ml alcohol vinegar
• 30g of honey

Method:

Cut all ingredients into small cubes or coarsely. Use the vegetables you have in the amount you prefer.

Arrange in a refractory with the olive oil (VERY OLIVE OIL), the seasonings and dried herbs of your choice.

To give a wonderful taste and a great appearance mix the balsamic vinegar, alcohol vinegar and honey, mix to form a sauce.

Pour this sauce over the vegetables, reserve a little to add halfway through cooking.

Let bake approximately 50 minutes. (add a little vinegar-honey mixture and mix halfway through the 50 minutes)
