My Thanksgiving Meal and What I am Thankful For
In this video "My Thanksgiving Meal and What I am Thankful For" I showcase what I cooked for my Thanksgiving dinner and talk how I'm thankful for my channel members, followers and viewers. What with turkeys being so expensive and not a huge selection here in this country just yet, I cookup a beef brisket, served with the more traditional mashed potato, pumpkin and homemade gravy from the meat drippings.

Recipe
3 Lb yearling beef brisket, 2 tbs maple syrup, salt and pepper to taste, dried garlic powder, umami, mixed died herbs, butcher's string (to tie the meat in a roll), enough aluminum foil to wrap the meat.
Method
Score fat side of beef with sharp knife cutting through fat layer but not into meat, roll it into a roll and tie with butcher's string tightly every 2 inches. Then rub 1 tbs of maple syrup over the meat, sprinkle with all the dry ingredients and slow roast at 180°F for 3 hours to render fat. Then remove from oven, baste with remaining maple syrup, re-season with dry ingredients and wrap with aluminum foil, return on roasting dish and roast at 220°F for another 4 to 5 hours to tender, don't forget to add a couple of cups of water to prevent all from drying out.
Gravy
Meat juices, 2 tbs all purpose flour, salt and pepper to taste, additional maple syrup, herbs and spices to taste, water as required.
