Red Tomato & Apple Chutney

Ingredients

6 pounds ripe tomatoes finely chopped
6 pounds tart green apples finely chopped
2 pounds onions finely chopped
½ pound red bell peppers finely chopped
½ pound green bell peppers finely chopped
1 cup finely chopped celery
5 cups cider vinegar or malt vinegar
2½ cups sugar
¼ cup pickling or fine sea salt
1 pound golden raisins

1. Combine the tomatoes, apples, onions, red and green bell peppers, celery, vinegar, sugar and salt in a large saucepan. Bring to a boil, stirring to dissolve the sugar. Decrease the heat and simmer until the mixture thickens, stirring frequently, about 1½ hours.

2. Add the raisins and continue to simmer for 20 to 30 minutes, until the mixture reaches a desired consistency. Stir frequently to prevent scorching.

3. Pack the mixture into clean hot 1-pint canning jars, leaving ½ inch headspace. Remove any air bubbles and seal.

4. Process in a boiling water bath for 15 minutes. Let cool undisturbed for 12 hours. Store in a cool, dry place.
