We cooked Lechon, a pig skewered on a long bamboo pole that is roasted in a low fire over charcoal.
On every Filipino occasion (i.e. Weddings, Birthdays, Baptism, and Graduation),
would not be complete without a whole Lechon served in the middle of the dining table.
Cooking Lechon requires a lot of patience but despite waiting for hours for Lechon Baboy to be cooked, it can be worth the wait, as you will be getting the crispy, golden brown skin, which tops the tender meat that melts in one’s mouth.
