Beef Bangers ( British breakfast sausage )

ingredients:
for 1000kg sausage:
700gr lean beef
300gr beef fat
18gr himalayan salt
1.8gr white pepper
1.8 dried sage
1gr nutmeg
0.6gr cayenne pepper
100gr rusk
140ml ıce water
1 tea spoon worchesterchire sauce
method:
grind all ingredients through 3mm plate
mix with a stand mixer all the ingredients and spices (and the rusk) until its tacky
stuff in hog casings about 10-12 cm long
READY....
note: as its a fresh sausage cook it very gently on low heat
