Hello Legends! Welcome back to another episode in our cooking adventure. Today we are cooking up a delicious, nourishing, and meal-prep friendly colorful vegan curry! This one is ideal for those nights when you have lots of veg lying around but want something nourishing, warm, and spicy all in one. Perfect year round, but we're using some summer-veg friendly recipes for this one. Let's get into it!

Recipe: Vegetarian Curry

Ingredients:

1 TB olive oil
1 onion, diced
3 cloves of garlic, minced
1 bell pepper, diced
1 medium eggplant, diced
1 bunch of basil, roughly chopped
2 tsp cumin
1/2 to 1 tsp chili flakes
1/2 tsp turmeric
Salt and pepper, to taste
1 cup coconut milk, full fat
