Everyday Thai Peanut Chicken

This baked Thai peanut chicken is SO GOOD and SO EASY TO MAKE! I’m using chicken thighs per the recipe, but I don’t see why you couldn’t use breasts, if that’s more your style. The sauce is AMAZING and it goes really well with rice. Not gonna lie— I wish I’d made a larger batch.
