Tori's Chocolate Chip Cookie Recipe
Years ago, I got tired of my chocolate chips cookies always coming out different. I would sometimes get flat, sometimes chunky, sometime soft or sometimes crunchy! I started looking at the different factors and trying to figure out how to make a super soft and moist cookie. Also, ones that wouldn't completely flatten out and that would be a bit more predictable. I finally came up with this recipe. As Tori became a young teen, I started having her bake them and she became a pro at it! After a while, I stopped making them all together and they became known as "Tori's Chocolate Chip Cookies". Any one who is close to our family knows this recipe as "Tori's Cookies". If I show up with a plate of chocolate chip cookies, the first question is "Are those Tori's?" These have truly become her cookies I haven't made a batch without her in probably 10 years. We are letting out our little family secret so, give em' a try.

2 1/2 cups flour
1 tsp baking soda
1/2 tps salt
1 cup butter, soft
1 1/2 cup brown sugar, packed
2 tsp vanilla
2 large eggs
1 1/2 cups mini chocolate chips
1 cup nuts (optional)
In stand mixer, beat together butter, sugar & vanilla. Once blended, add eggs and beat to blend well. Add in dry ingredients and mix. Add chocolate chips and nuts last. Chill dough for 2 hours or overnight. Drop 2 inches apart on baking sheets. Bake at 400 degrees for 6-7 mins. 3 minutes on the bottom rack and 3-4 mins on the top rack of the oven with a insulated pan on the top shelf of the oven rack. Cool 5 mins.
Note: Do not bake these cookies on a insulated cookie sheet. They will not cook correctly. Tip: Bake them at a high heat for 3 minutes on the bottom rack without the insulated pan and then transfer the cookie sheet on top of an insulated pan. Bake an additional 3-4 just until set and barely brown at all.
