This refreshing and delicious sponge cake recipe is really easy to make and best of all, you can make it from scratch and enjoy a homemade sweet cheese cake.

Sweet Cheese and Dried Fruits Sponge Cake Recipe:

Ingredients for the filling:

3 eggs at room temperature
950 grams soft cheese
200 grams sugar
200 grams dried fruits
1 spoon vanilla essence
1 teaspoon rum essence
100 grams semolina
1 lemon peel or 1 squeezed lemon juice

Ingredients for the sponge:

250 grams of flour
8 eggs at room temperature
150 grams of sugar
10 grams of baking powder
50 ml of oil
100 ml of milk
pinch of salt

Directions:

For the filling: Place the soft cheese in a large bowl, add in the sugar, mix well, add the 3 eggs in, mix well, add the lemon peel or lemon juice, you can also replace it with lemon essence, add the vanilla essence, rum essence and the semolina. Mix very well and now it's time to add the dried fruits. You can skip this step if you prefer not to use dried fruits. Make sure you mix everything well.

For the sponge: Place all the eggs in a food mixer with the whisk attachment on, add the sugar, salt and mix well until the eggs form soft peaks. It should be triple in volume when it's done. When the eggs are done, you can add the oil in, add flour bit by bit, making sure, with a spoon, you mix well, from the bottom upwards. Repeat this step until you have added all the flour in. You can add the milk in, mixing again, to make sure everything is well incorporated.

Assembling and baking the cake: Use a non stick oven tray, preferably glass, line it with baking paper, add in half of the sponge mixture, spread the mixture in the tray, to make sure it's levelled. You can place the tray in the pre-heated oven at 180 degrees Celsius, for 20 minutes or until you get a golden sponge. You can test if the sponge is baked by inserting a toothpick in the middle. If it comes out clean, the sponge is ready. When the sponge is done, allow to cool for a little while, then you need to add the cheese filling on top of the sponge, spread it evenly on the whole surface. Add on top of the cheese filling the rest of the sponge mixture, level it across the whole surface, and place back in the pre-heated oven at 170 degrees Celsius, for 40 minutes. Allow to cool down and enjoy!
