Instant Pot Salsa Verde Chicken & Rice

A little chicken, rice, cilantro, spice and salsa verde and you can make this instant pot salsa verde chicken and rice. It can be eaten with tortillas or as a burrito bowl. Give it a try. - Michele

Ingredients
• 1 tsp olive oil
• 1 pound boneless, skinless chicken breasts, cut into bite-sized cubes
• 1 tsp onion powder
• 1/2 teaspoon garlic powder
• 1 teaspoon smoked paprika
• 1/4 tsp oregano
• 1 teaspoon cumin
• 2 cups uncooked white rice
• 2  cups water
• 2 tsp chicken boullion granules
• 1 cup salsa verde

FOR GARNISH: salsa, cilantro, lime wedges, diced avocado, diced fresh tomatoes, green onions, shredded cheese etc.

Instructions:
• Combine all dry seasonings, chicken and olive oil and toss to coat.  
• Set insta pot to sauté or sear and saute' chicken until barely cooked through. 
• Add rice, chicken broth, and salsa. 
• Seal instant pot and set to white rice  and let release naturally for 10 minutes after cooking.
• Serve garnished with topping of your choice: hot sauce, salsa, cilantro, lime wedges, diced avocado, diced fresh tomatoes, green onions, cheese etc.
