Ingredients:

• 1 kg of cubed filet mignon
• 1 large onion
• 3 cloves of garlic
• 4 tablespoons of wheat flour
• 100g diced bacon
• ¼ cup of tomato paste (about 130 g)
• 2 tablespoons of Worcestershire sauce
• 1 lemon
• 5 tablespoons of olive oil
• ¼ cup of parsley
• 3 cups of water (tea)
• salt and pepper

Method:

Peel and finely chop the onion and garlic. Take a little more than 3 cups (tea) of water to heat in a kettle. Chop the parsley and reserve.

Cut the filet mignon into small pieces. With a clean dish towel, dry the meat well.

Transfer to a large bowl or platter and mix with the wheat flour, coating the pieces of meat.

Place a large pan over medium heat. When hot, drizzle with 2 tablespoons of oil and brown about ⅓ of the cubes, without covering the entire bottom - if you put all the meat in at once, it will cool the pan and cook in the liquid itself, instead of browning. . Season with salt and pepper to taste and stir slowly to brown evenly.

Transfer the cubes to a bowl and keep the pan over medium heat. Brown the rest of the meat in two more stages, basting it with a little oil until golden.

After removing the last cubes, water the pan with 1 cup (tea) of hot water and the lemon juice. With a wooden spoon, scrape the bottom of the pan well to dissolve the burn that has formed, just until the pan is clean, about 1 minute. Transfer this broth to the meat bowl.

Return the pan to medium heat and drizzle with the remaining oil. Add the bacon and brown, stirring occasionally. Add the onion and garlic, sauté for about 3 minutes.

Add the tomato paste and mix well. Return the meat, with the broth, to the pan and stir just to heat up. Add more boiling water and stir in the Worcestershire sauce. When it starts to boil, let it cook for another 10 minutes.

Turn off the heat, taste and adjust the salt and pepper. Sprinkle with parsley and serve next, suggestion for a side dish, white rice.
