You only need potatoes, egg and oil to prepare a delicious potato mayonnaise. In this video learn how to make a potato mayonnaise the way I usually make it at home.

Here at home it's a traditional Sunday dish, always an excellent accompaniment to barbecues and any type of meat.

Ingredients:

• 500g to 700g or 5 medium potatoes
• 2 egg
• 1 cup approximately oil of your choice
• 2 tablespoons of vinegar
• 1/2 small onion
• salt and black pepper to taste
• 1 cup chives and parsley

Method:

Put the potatoes and 1 egg to cook. When they are soft, remove them and let them cool.

Peel and chop the potatoes into pieces and set aside. Do the same with the boiled egg and set aside.

In the blender place 1 raw egg and a drizzle of oil. Turn on the blender and without turning it off, add the oil little by little, until the creaminess you prefer. Still without turning it off, add the onion, vinegar (remembering that the vinegar thins the sauce, so if you want it thicker, just add a spoonful), salt and pepper to taste.

Now the sauce is ready.

On a platter, place the chopped potatoes, the sauce on top and mix gently. On top put the chopped egg and the green smell. Is ready.
