One Pot Pierogi & Sausage with Cream Sauce

I went to the grocery store and noticed Pierogi's in the freezer section. It brought back a flood of childhood memories. As a child, I loved these potato filled Polish dumplings. I am not sure how I was introduced to them because my mother had southern roots, not polish. When they came into my life, they became a comfort food to me. When I saw them in the store, I just HAD to buy them and make them. Using the recipe we found on coldweathercomfortfood.com, we made these little potato pillows.

INGREDIENTS

16 Oz Frozen Potato Pierogi
1 Kielbasa or 3 Links if using another type sausage, sliced
3 Oz Cream Cheese Softened
½ Cup Heavy Cream
½ Cup Water
1 tsp Chicken Boullion Granules
Pepper
1 Cup Cheddar Cheese, Divided
½ Cup Green Onion Sliced, Divided
Milk as needed to Thin Sauce

INSTRUCTIONS

In a large skillet, cook sausage until sides are golden brown.
Add pierogi and cook according to package directions.
Turn heat to low and slowly add chicken broth let it warm up thoroughly.
Then add cream cheese, sour cream, pepper and mix constantly to combine.
Next, add half of the cheese and onions and mix to combine, then stir until sauce thickens. Add milk 1 TB at a time if sauce is too thick.
Turn off the heat and top with 2nd half of cheese and green onions, cover and let sit till the cheese melts. Serve warm and enjoy!
