低溫下萃取咖啡,雖然需要較久的時間,但這樣的過程能夠大為降低酸度(acidity)與苦澀味,使得風味更加甘甜醇厚,不僅如此,這樣低溫冷萃而成的低酸度咖啡,不但可以保護牙齒的琺瑯質,也比較不傷胃。
