How is everyone's baking going? I have made my delicious Molasses Pecan Pie with the easiest homemade pie crust ever! Seriously, a 5 year old could do it! This pie is not your normal pecan pie. It is rich and creamy and goes great with a cup of coffee! Y'all have a wonderful Thanksgiving. Be safe and Y'all go make you some!

Easiest Pie Crust Ever!
1 1/2 cup flour
1 heaping TBSP sugar
1/2 tsp salt
1/2 cup vegetable oil
1/4 cup whole milk

Mix flour, salt & sugar together in pie plate. Make a well in the center of the mixture. Pour oil & most, but not all of the milk into well & stir with a fork. If dough is too dry, add more milk a tad at a time. Dough should not be sticky, but should form a ball easily. Add more flour if needed. Press with hand into pan. If baking for a pudding pie, poke bottom and sides with a fork and bake in a preheated 350 degree oven for 15 - 20 minutes.

For this recipe, you will not be baking prior to filling.

Molasses Pecan Pie

1 large egg
1 can sweetened condensed milk
1 cup corn syrup
1 TBSP molasses
1 tsp vanilla
1 cup chopped pecans

Preheat oven to 425 degrees F. Beat eggs until frothy; thoroughly blend in sweetened condensed milk, corn syrup, molasses, and vanilla. Mix in pecans. Pour into unbaked pie shell.

Lightly lay aluminum foil over pie in oven. Bake in preheated 425 degree oven 10 minutes; reduce heat to 350 and bake 25 - 30 minutes longer, removing foil after about 15 minutes. Center should be softly set. Do not overbake. Cool completely before cutting.
