Thai Cilantro Peanut Sauce

This is another dish we made for our family birthday dinner. This is a recipe that I have had written down in my recipes cards for about 5 years wanting to try it. I can't say for certain where the original recipe came from, but I think it was Pampered Chef. I would make it again, but I would 1/2 the amount of cilantro because it was a bit over-powering. - Michele

Ingredients:
1 T. soy sauce
1/3 cup splenda
2 tsp. lime zest
1/4 cup lime juice
1 garlic gloves, pressed
1 tsp. siracha sauce
3/4 cup creamy peanut butter
1/4 bunch fresh cilantro
1/4 cup coconut milk
1 tsp. fresh ginger, pressed
1/4 C. water
1/2 tsp. sesame oil

Add all the ingredients to a blender and blend. Use as a sauce on pasta, wraps, salad, chicken skewers or as a dipping sauce.
