Ackee & Saltfish with Fried Dumplings MADE EASY!

ACKEE & SALTFISH
- 2 tsp Vegetable oil
- 2 Tins of ackee
- 1 pack of boneless saltfish
- 1 cup Mixed peppers
- Chopped tomatoes
- 2 Spring onion
- 1/4 Onion
- Scotch bonnet
- Black pepper
optional: 2 cloves of garlic finely chopped, paprika, all purpose seasoning
Directions:
- Pour 250ml water into pot on high heat and place boneless saltfish inside.
- Boil for 20 minutes
- Drain water and repeat 1 or 2 times (Alternatively soak saltfish overnight in cold water)
- Add 2 tablespoons vegetable oil into frying pan on medium heat
- Then add 1/4 chopped onions, 1 cup Mixed (sweet) pepper, 1 Chopped tomatoes, 2 Spring onion and 1 whole Scotch Bonnet
(optional Thyme, 4 cloves of garlic finely chopped) and fry & stir untill cooked
- Drain 2 tins of Ackee and place in frying pan with cooked veg
- Add a pinch of Black pepper and gently stir everything together (not too rough as ackee will break)
- Let it all simmer for for 10 minutes on low heat
FRIED DUMPLING
- 125ml water
- 500g self raising flour
- 250ml Vegetable oil
- 4tsp butter
- 1/2 tsp salt
- 3 tsp sugar
- optional: 1/2 cup milk
Serving suggestion: 4
Directions:
- Add 500g self raising flour (If using plain flour, add 1 tsp baking powder)
- Pour 125ml water
- Add 4tsp butter, 1/2 tsp salt, 3 tsp sugar (optional 1/2 cup milk)
- Knead together into ball (Add flour/water if necessary)
- Break into small pieces and roll into small flatfish dumplings
- Add 2 tablespoons vegetable oil into frying pan (medium high heat)
- Place dumplings into frying pan (medium heat)
- Fry until golden brown on each side
