Bite & hold or Bite & thrash??

There are a couple of options when bringing a dog out in protection work. You can train the bite and hold or you can teach the dog to bite and fight. We prefer the latter. Use of canines, thrash and pull back for maximum damage, reverse to the other arm if they try to strike, grab collar, etc. Which do you prefer?
