Spiced Poached Pears (Sous Vide)

Ingredients:
2 ripe pears, I used Asian
2 tbsp butter
1 tsp grated ginger
1/4 tsp Kosher salt
3 tbsp brown sugar
1 tbsp lemon juice
1 tbsp dark rum
