Steve Selin was a musician when he met the late, inimitable Peter Hoover, who was a lifelong ardent string band music player and ethnomusicologist. Peter also was a cider maker, which rubbed off on Steve, who later founded South Hill Cider in Ithaca, NY, which sits between two state parks and opens up to one of the public trails of the Finger Lakes Land Trust. We met up with Steve and his friend Melody back in August to scope out some apples for cider making to learn about what makes a good cider apple versus a good eating apple.
