How To Make Mini Chocolate Cheesecakes

Crust
•1 1/4 cup graham cracker crumbs
•1 Tbsp sugar
•1 Tbsp cocoa powder
•6 Tbsp butter, melted

Bake at 325°F for 7 minutes.

Chocolate Cheesecake Filling
•1/4 cup heavy cream, hot
•3/4 cup chocolate chips
•1 (8 oz) package of cream cheese
•1 whole egg
•1 egg yolk
•1/3 cup granulated sugar
•3 tsps all purpose flour

Directions:

1. Mix all crust ingredients in a bowl until evenly mixed and texture resembles wet sand.
2. Line 1 standard size muffin tin with muffin liners and firmly press about 1-2 tablespoons of crust into each liner.
3. Bake crust in a preheated oven at 325°F for 7 minutes then remove from oven.
4. To make the cheesecake filling, heat heavy cream until very hot but not boiling. Add chocolate chips in hot heavy cream and mix until melted and smooth.
5. In a large bowl, beat together cream cheese, sugar, egg, and egg yolk until smooth.
6. To cream cheese mixture, add melted chocolate and stir until evenly combined.
7. Whisk in flour and mix just until combined.
8. Add cheesecake mixture into each muffin liner.
9. Bake at 325°F for 23-25 minutes.
10. Allow to cool in tin 10-15 minutes. Remove from muffin tin and serve cooled.
