season the ribeye with your favorite rub and cook indirect until about 125 degrees internal and then sear the steak directly over hot charcoal for 3 minutes per side, pull and rest for 10-20 minutes with some pats of butter on the steak. Slice into the steak after cutting the ribeye off the bone.
