Vanlife Recipe - Wimberry Scotch Pancakes

The bilberry has many other names, including blaeberry, whortleberry, whinberry (or winberry), whimberry, wimberry, myrtle blueberry, fraughan and black-hearts - Shropshire Life Magazine

Ingredients serves 2 (makes 6 pancakes):
160g Self raising flour
200ml Milk
2 Eggs
40g caster sugar
Pinch of Salt
½ tsp Cinnamon
50g Washed wimberries (or blueberries)
Maple syrup to serve

In a jug or mug, whisk together milk and eggs. In a separate bowl mix the dry ingredients, add the flour, sugar, salt and cinnamon. Make a well in the Center of the dry ingredients and add the milk and egg mix. Mixed together thoroughly making sure there are no lumps. The batter should be thick but pourable. Add the wimberries gently.

Heat a heavy-based frying pan and grease with a little butter or vegetable oil. Turn the heat down to medium.

Pour a small ladle of batter into the pan and level it out. You can add more pancakes to the pan, but don’t overload it or let the pancakes merge into one another.

Allow each pancake to cook for around 3 minutes and turn over. They should be golden with small air bubbles appearing on the surface.

Remove from the pan and keep warm while you cook the remainder of the pancakes.

Assemble and serve with a good drizzle of maple syrup. Other topping options could include, honey, nuts or golden syrup.

Wimberry vodka.

Empty half a small bottle of vodka into another empty, clean glass bottle. Fill the rest of bottle with wimberries and 3 tbsp of caster sugar. A funnel makes this easier. Give them both a small shake and allow the flavour and colours to release. This can be kept for months. You can drink it with the berries in or remove them by strain the vodka through a muslin cloth
