One of the BEST Salsas Ever? Colombian Hogao

This is without a doubt one of the tastiest salsas you can make in less than 30 minutes. Colombian hogao salsa has a very unusual combination of flavors; the tomato, garlic, green onion and freshly ground cumin meld together to become an indulgent, comforting bite that you can dip chip, arepas (or really anything) into with delight. Definitely, in my opinion, one of the best salsas ever, and a salsa that anyone can make. 1 ½ tablespoons olive oil
2 cups heirloom tomatoes, finely diced
1 cup green onions, the greener part, finely sliced
2 garlic cloves, minced
2 teaspoons whole cumin seeds, toasted and ground (I usually add more, to taste)
¼ teaspoon sea salt
¼ teaspoon ground black pepper

1. In a non-stick pan toast 2 teaspoons cumin seeds over medium heat for about 3 minutes, or until browning and aromatic. Transfer the seeds to a mortar and pestle, and crush until it becomes a fine powder.

2. In a cast-iron pan over medium to medium-high heat with 1 ½ tablespoons olive oil, add the finely diced tomato, green onion, garlic, freshly ground cumin, sea salt and ground black pepper. Let this reduce down for 10 minutes, stirring occasionally. After 10 minutes has passed, reduce the heat to medium-low, and let thicken and reduce further for another 10 minutes, stirring occasionally. Remove from the heat and serve right away.
