Malay cake with brown sugar (Yeast Version)
Ingredients:
♦ 500g plain flour
♦ 6 eggs (beaten)
♦ One and a half Coconut Sugar (approx. 300g)
♦ 200ml milk
♦ 175ml hot water (to dissolve shredded coconut sugar)
♦ 8g instant yeast
♦ A little warm water & a little sugar (fortified yeast)
♦ 1⁄2 tsp fine salt
♦ 80ml corn oil

Steps:
1) (A) Dissolve shredded coconut sugar in 175ml hot water, add milk and salt.
(B) With a little warm water & a little sugar, add 8g instant yeast.
2) Beat 6 eggs, add (A) & B + corn oil, mix well until combined.
3) Add the filtered flour in 2 portions. Stir on one side until a batter forms.
4) Cover the batter bowl with cling wrap and set aside at room temperature to let the batter rise for 1 hour.
5) One hour later fermentation process...
Line a 10-inch steam tray with non-stick baking paper. Set aside.
(or just oil). Pour the batter into a steaming tray.
6) Heat the water in the steamer until boiling. (The amount of water must be enough for 50 minutes of cooking. )
7) Put in the steam oven and steam for 50 minutes (don't open the steam for the first 30 minutes to avoid the cake collapsing).
8) Put the steamed malay cake on a wire rack to cool.
9) Yeast version of brown sugar malay cake is Done and ready to serve !
