Mediterranean style chickpea flatbread (vegan, gluten-free)

1/2 cup chickpea flour
1/2 cup water
——mix & cover (let it rest 1 hour - overnight)
Add Rosemary and stir (optional: add a slash of Olive oil and sea salt/ original Socca/Farinata recipe)
Pour into a baking dish & bake in the air fryer or oven at 400F for 15-20 minutes. You may need to flip it after 20 minutes to crisp up the other side and bake for another 5 minutes until golden brown.
Eat as is or use as a flatbread and add your favorite toppings.
Here I added a bit of tomato paste, roasted a few artichoke hearts, added capers and sliced olives, chili flakes and Italian herbs and a splash of Balsamic glaze.
Enjoy after / with a green salad 🥗
Vary the toppings, cut the chickpea flatbread into triangles and eat as crackers with your favorite dip.
