RESEPI PATIN TEMPOYAK PADU SEMPENA MUSIM DURIAN
Resepi :
- 1 1/2 inci kunyit hidup
- 2 biji cili merah
- 7 biji cili api
- 900ml air
- 5 - 6 sudu makan tempoyak
- 2 keping asam keping
- 1 1/2 sudu teh garam
- 3 sudu teh gula
- 1 ekor ikan patin
- 1 ikat daun kesum
* Tips nak kuah licin dan tak berketul : Kacau tempoyak dengan air sampai sebati sebelum masak atas dapur
* Tips untuk dapatkan kuah yang pekat : Lebihkan tempoyak atau kurangkan air dan masak sampai pekat sebelum masukkan ikan

- 2 red chillies
- 7 thai bird eye chillies
- 900ml air
- 5 - 6 tablespoons tempoyak/fermented durian
- 2 pieces of tamarind peels
- 1 1/2 teaspoons of salt
- 3 teaspoons of sugar
- 1 silver catfish
- 1 bunch of kesum leaves/laksa leaves
* Tips to make the gravy smooth and not lumpy: Stir the tempoyak with water until well blended before cooking on the stove
* Tips to get a thick gravy: Add more tempoyak or reduce water and cook until thick before adding the fish
