Potato Pancakes with Mushrooms

Potato Pancakes with Mushrooms-
COOKING INGREDIENTS:
Large Potatoes - 6
Egg -- 1
All Purpose Flour - 1 tbsp
Cornmeal - 4 tbsp
Mushrooms - 400 – 450 q
Onion - 1 large
Salt and Pepper -- To Taste
Kcal per 100 q – 95
COOKING INSTRUCTIONS:
Wash and peel the potatoes
Cut them into quarters
Boil the potatoes in salted water until done
Slice mushrooms and chop the onion
Stir and sauté the onion and mushrooms over medium heat until golden & softened
Season lightly with salt and pepper
Mash the potatoes and mix with flour, cornmeal and 1 egg
Season with sale and spices to taste, mix
Dust the working place with cornmeal
Place 2-3 tbsp of potato mixture on it and pat it into a disk shape
Place a heaping tablespoon of filling into the center and pinch the edges together to seal
Dip the stuffed pancake in cornmeal, turning to coat
Fry the pancakes in oil, over medium heat, for 3-4 minutes per side or until golden
Serve with sour cream on a plate lined with paper towels!
