Does Incognito Mode Protect Me?
Pretend you are in a house. Your house has windows to the outside world, but it also has walls that separate rooms in the house. So if you want to change your clothes and you don't want your mom to see you, you might go into another room. However, when you are using "incognito" mode you are still changing in front of the open window where the rest of the world can see what you are doing.
In essence, you are preventing the cookies, history, etc from being stored on the local device (so if someone picks up your phone they won't see where you have been), but anyone monitoring your activity from the outside isn't affected.

Better to use a service like Duck Duck Go or Brave Browser that ACTUALLY respects your privacy and actively blocks companies from collecting your data.
