Ingredients:
Cream:
10 g gelatin + 50 g water.
Let stand 7 to 10 minutes.
Eggs 2 pieces.
Sugar 250g.
Corn starch 40 g.
Stir until smooth.
600g hot milk.
Gradually add.
Bring to the boil while stirring constantly.
Cream together 100g butter.
200g dark chocolate.
Gelatin. Stir until smooth.
Cover with cling film. Chill in the fridge for a few hours (I left it overnight).
Jam:
Cherries 300g.
Sugar 100g.
20 grams of cornstarch.
Bring to a boil, stirring constantly, and cook for another 2 minutes.
Cover with cling film and let cool.
Dough:
430 grams of flour.
Dark cocoa 25g.
A pinch of salt.
Frozen butter 270 g.
Rub into crumbs.
3 yolks (50 g).
Strong Alcohol 20g.
ice water 150 g.
Knead into a soft dough.
Divide into 10 equal parts.
Cover with cling film.
Chill in the fridge for a few hours (I left it overnight).
Roll out the dough to a diameter of about 23 cm.
Prick the dough with a fork.
Bake in a preheated oven at 200°C for 5 minutes.
Trim the edges to a diameter of 20-21 cm.
Cream 30-36% 200g.
Beat until soft peaks form.
Gradually mix in the cream and stir until smooth.
Assemble the cake.
Add the jam.
Place in the fridge for several hours.
Crush leftovers into crumbs.
Sprinkle with the crumble cake.
Decorate with chocolate and cocoa.
